St. George was the last stop on the way back to Las Vegas. Besides being a good place for restoring your energy, it is home to Snow Canyon State Park.

The park is midsize, but rich with a variety of formations that you will want to explore for a day (or half) of easy yet interesting hikes. Short on time, the Whiterocks Amphitheater is one amazing portions to visit.
